100% Five Ashes Vineyard.Colour:
The wine has a youthful straw green colour.Bouquet:
The nose exhibits floral lime and kiwi fruits, with a hint of freshly rubbed sage and undertones of creamy vanilla bean.Palate:
The palate is fresh and zesty, with excellent minerality, a juicy mid-palate and a long lingering finish as is typical for the Hamelin Bay Sauvignon Blanc. Maturation on lees and barrel fermentation have been used to add palate depth and mouth feel.Source:
Five Ashes Vineyard, Margaret RiverVintage Characteristics:
Warm dry vintage.Vinification:
Free-run juice was fermented in 86.5% Stainless steel and 13.5% barrel using PdM and VL3 yeasts. A balance between complex and clean ferments is the key to this wine.Cellaring Potential:
Suggested best fom September 2007 to 2008/9;Oak Treatment:
7% New and 6.5% one year old French oak barriques matured on yeast lees for 6 weeks prior to blending. French oak is judiciously used to provide support to the wines fruit, and remain undetectable in the background.Serving Suggestion:
