    The wine has a youthful straw green colour.
  • Bouquet:

    The nose exhibits floral lime and kiwi fruits, with a hint of freshly rubbed sage and undertones of creamy vanilla bean.
  • Palate:

    The palate is fresh and zesty, with excellent minerality, a juicy mid-palate and a long lingering finish as is typical for the Hamelin Bay Sauvignon Blanc. Maturation on lees and barrel fermentation have been used to add palate depth and mouth feel.

  • Vintage Characteristics:

    Warm dry vintage.
  • Vinification:

    Free-run juice was fermented in 86.5% Stainless steel and 13.5% barrel using PdM and VL3 yeasts. A balance between complex and clean ferments is the key to this wine.
  • Cellaring Potential:

    Suggested best fom September 2007 to 2008/9;
  • Oak Treatment:

    7% New and 6.5% one year old French oak barriques matured on yeast lees for 6 weeks prior to blending. French oak is judiciously used to provide support to the wines fruit, and remain undetectable in the background.

    Enjoy with freshly shucked oysters or pan seared scallops.
