    The wine has a youthful pale straw lemon colour.
  • Bouquet:

    Aromas of poached pears intermingles with fresh lemon sorbet`. Fermentation and maturation in French oak has afforded an attractive overlay of vanilla and a subtle spicy toastiness which compliments the fruit precisely. The cool year and associated high natural acidity enabled a high proportion of the chardonnay to go through malolactic fermentation- giving the pear and citrus fruits a subtle honey glaze.
  • Palate:

    The palate is elegant and restrained at this stage- with excellent mid-palate depth, a long lingering finish and an attractive minerality typical for Hamelin Bay. The wine will continue to improve for at least the next two to four years in the bottle.

    100% barrel fermentation.
  • Cellaring Potential:

    Suggested best 2008 to 2011; Suggested maximum 2013.
  • Oak Treatment:

    Barrel fermented and matured for 10 months with fortnightly battonage in 33% new, 55% one year old and balance two year old French oak barriques.

    Serve with any seafood dish, especially those with cream or lemon based sauces.
