    A youthful pale straw lemon in appearance.
  • Bouquet:

    The nose exudes fresh honey and glazed pears on a bed of mango cream, with marzipan overtones and an attractive spiciness from barrel fermentation and maturation in French oak barriques.
  • Palate:

    The palate is very pure and focussed, with exceptional length and minerality typical for Hamelin Bay. Increased use of wild fermentation has added complexity and texture.

    100% barrel fermentation with maturation for 8 months and fortnightly battonage or lees stirring.

    Serve with any seafood dish, especially those with cream or lemon based sauces.
